Obviously your two main constraints will be the time you can devote to your trip and your available budget. Assuming that you are travelling with a reliable company, you tend to get what you pay for. The main influences on the cost of the trip will be the number of people travelling together in one vehicle, the accommodation used and the miles covered. It's up to you to do the research to find out what kind of safari would best suit your interests, taking the constraints into account. Read, read and read - do plenty of research to find out what options are available. Do you want just to do game drives, or have you other interests you'd like to pursue?
You can do riding safaris: horse or camel (or indeed elephant - for a price - in Zimbabwe). Are you interested in Birding? Butterflies? Botany? Culture and anthropology? There are specialist safaris for all of these and more. If you live in the UK, you will get adverts in magazines such as BBC Wildlife, Wanderlust and Travel Africa. These can be useful, but you have to take some of them with a big pinch of salt. Several companies which advertise 'tailor-mades' actually are, bizarrely, overlanders.
